Duernas Cuisine is the result of a nice combination of picual and arbequina varities. The mild fruity flavour of arbequina is mantained together with the stability of the picual. It may be used for dressing and drizzling but is very convenient for deep frying.

Extraction System: Less than 1 hour it's the time we spent for obtaining high quality oil. Directly from the tree to the mill. All this process it's realized picking the olives by hand in small batches. In this way we avoid our worst enemy: oxidation.

Company: "Finca Duernas is an organic olive grove with its own mill that belonged to the same Serrano-López family for over 200 years. Located in Córdoba (Spain) they start the harvest collect during the ENVERO, a month and a half ahead to when it is traditionally done. Pressing is immediate due to the fact that the mill is placed in the center of the grove. In this way they avoid oxidation of a fresh fruit. Their facilities are modern : cellars with a air conditioning system avoiding temperature changes, insulated walls. All verified by the the organic quality system and IFS (european security food norm).
Finca Duernas's traceability system allow to know, through the lot number the area of the grove where the oil comes from, the exact date of harvest and who collect the olive. This is the best way to ensure food security to the consumer. They consider the organic farming the way to pass down the estate to further generations in optimal conditions.
